Chicken with Peach Sauce and Couscous

Peaches are in season so enjoy them! They have so many health benefits that go from cancer prevention, promoting healthy eyes, a healthy skin, a good digestion, a healthy pregnancy, a healthy brain function and a strong immunity and MORE. 

The peach sauce brings a nice contrast to the spiciness from the chili powder on the chicken. This recipe is a must try!

Ingredients

  • 1 medium lime
  • 1/3 cup peach preserves
  • 4 boneless chicken thighs
  • 1 teaspoon chili powder
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 peaches, sliced
  • Decoration: scallions, lime wedges

Preparation

  1. Grate the zest from the lime to obtain ½ teaspoon; then squeeze the juice to measure 1 tablespoon. Stir together the zest, the lime juice and the peach preserves.
  2. Sprinkle chicken with salt, pepper and chili powder.
  3. Heat oil in a nonstick skillet over medium-high and cook the chicken until done. It should take about 5-7 minutes per side. Remove the chicken from the pan.
  4. Reduce the heat to medium and add the sliced peaches to the pan. Cook until they start to soften. Stir occasionally.
  5. Remove the pan from the heat and add the peach preserve sauce and stir well.
  6. Top with scallions and serve immediately with the side of your choice.
