The VegOut challenge, organized by Recipe4Success, launched on Sunday, March 1.

Are you participating?

In my household, we eat on average 3-4 vegetables every day. We love vegetables, whether bulb or blossom, stalk or leaf, root or bud.

At the beginning of March, we had poblano peppers, rainbow chard, rapini, avocado, tomatillo, carrot, bok choy and bean sprouts.

Today, I am thinking homemade corn tortillas (so much simpler to make since I bought a “tortilla press”) with different vegetables: quick-pickled cabbage slaw, marinated fennel, guacamole, cherry tomatoes, and rocket salad.

I’ll be honest. While these corn tortillas would be wonderful with the vegetables and perhaps a heaping of grated cheese, not showing in the picture is the leftover pork roast we had it with.
