The Sparkling Prickly Pear - A Terrific Holiday Cocktail

Treat yourself to one of these bubbly concoctions for Halloween - it's got the right color and is almost good for you! This cocktail balances the sweet and spicy ginger syrup and earthy prickly pear purée. Perfect for a liquid brunch or before the holiday meals.

Ingredients

  • ½ prickly pear
  • 1 ounce gin
  • ½ ounce Ginger Syrup (recipe below)
  • 4 ounces champagne
Ginger Syrup
  • 2-inch piece of ginger, peeled
  • 1 cup sugar
  • 1 cup water

Preparation

The Sparkling Prickly Pear

Yields 1 cocktail

Place prickly pear in a cocktail shaker and muddle with pestle until fruit is chunky purée consistency. Add gin and Ginger Syrup to the shaker and fill ⅔ full with ice. Place the cap on the shaker and shake vigorously until shaker becomes frosty. Strain into a coupe and top with champagne. Imbibe immediately

Ginger Syrup

Yields 2 cups

Slice ginger thinly and place in a small heavy-bottomed saucepan. Add sugar and water. Bring to a boil over high heat. Once the syrup boils, turn off heat and cool completely. Strain and store in an airtight container in the refrigerator for up to 1 week.
