One of Houston’s nicknames is Space City, as the proud home of Space Center Houston, the coastal visitor center of NASA’s astronaut training and flight control complex. What struck me when I moved here is Houston’s dichotomy of space: a relatively compact downtown area surrounded by expansive neighborhoods and shopping areas.

Editor Francine Spiering and I enjoy creating a theme for each issue, one we can play on to capture a common denominator that unites a variety of apparently unrelated stories. Readers often share with me that they love discovering that a feature story which at first didn’t seem to fit the theme actually does. When I told Francine that I wanted to do a “Space” issue her first response was: “What are we going to write about—outer space food?” Then we quickly brainstormed a whole galaxy of ideas about ways to use “space” to tell the food stories of Houston and beyond.

Our regular contributors also got our play on words. When I read a story that we assigned and see where the writers chose to go with it, I’m often inspired—and I always learn something new. In this issue, Justin Kouri wows us with his spectacular seasonal recipes. David Leftwich tells the story of the big journey of smallish fruit. These stories matter, and there are many more to be told.
