- 1 large freestone peach per person
- Olive oil
- Sea salt
- Smoked duck
To grill the peaches: get 1 large freestone peach per person, cut them in half, remove the stones and brush the cut sides with a little olive oil. Sprinkle with sea salt (and a little cayenne if you like) and put cut-side down on a hot grill for 2-3 minutes. Serve immediately either alongside smoked duck, or topped with pulled smoked duck (in both cases: heat the duck prior to serving).
