Kumquat Compote

This easy kumquat-cranberry compote is both beautiful and delicious! Put in a pretty jar it makes a great hostess gift. This goes great with venison, chicken, lamb. Or make a fantastic easy appetizer by putting this over local goat cheese serve it with crackers.

Kumquat Cranberry Compote

1 cup quartered, seeded kumquats

1 bag cranberries (12 ounce)

1 tbsp fresh (Meyer) lemon juice

1 cup sugar

1 cup water

1 jalapeno, seeds removed and diced fine (adjust chili heat to taste)

1 tsp smoked paprika

Put the kumquat quarters (make sure ALL seeds are removed) in cold water, bring to a boil and simmer 15 minutes. Add 1 cup sugar and the diced jalapeƱo, and simmer for another 15 minutes. Add the smoked paprika and the cranberries. Simmer until the cranberries are all popped. It takes 10-15 minutes.
