Sitting at the bar at Third Coast feels like sitting on top of Houston: The view over the waterfall wrapping around the John P. McGovern Texas Medical Center Commons gives a front-row seat to the work being done at the largest medical center in the world. Ideas and innovation seem to float in the air, providing food for the brain as well as dynamic dishes and drinks for the body. It feels like the place to go if you want to change the world.
Chef Jon Buchanan has devised a “Modern Houstonian” menu full of fresh, locally sourced ingredients from vendors we know and love, such as 44 Farms, Moonflower Farms, Houston Dairy Maids and Katz Coffee. The menu reflects not only the diverse ingredients of the area, but is also sensitive to the diverse needs of its guests: subtle reminders of calorie counts; designations for vegan, vegetarian and gluten-free items; and a range of options from refreshing salads for when patrons prefer to keep their meal light to burgers and fries for when it’s time to indulge. There’s a time for everything, after all.
Dark and luxurious booths surround the bar, giving it a club feel. It’s a perfect spot to sink in and peruse the drink menu—an entertaining activity in itself. Cocktails are classics with a twist, celebrating entrepreneurial spirit with selections such as the “IPO” or the “Acquisition,” and sometimes getting wry, like with the “Biohazard: a martini so dirty it may kill you.”
