If you are looking for a hearty burger with a twist, look no further. We love the inventive toppings. Use two hands and ask for extra napkins!

For those of you who don't know Chef Lance with F.E.E.D TX restaurant group, he's a surfer - to say that the surf culture influences his inventive recipes and menu development is an understatement. Case in point is the Eddie Burger at Liberty Kitchen + Oyster Bar that is mamed after Eddie Aikau, a famous northshore Hawaiian lifeguard and surfer. Chef Lance was having a burger after surfing one day and a guy who had an Eddie Aikau t-shirt on sat next to him. He asked what the guy was eating - it was a pimento cheese, pickle and onion sandwich. Lance said "that would be good on a burger" so they ordered one made that way and deemed it great! When he returned to Houston, he simply added Liberty Kitchen's mavericks mustard and bacon jam. What to name it? He remembered that the t-shirt the guy who inspired the burger was wearing - Eddie Aikau!
