Ingredients
- 1 medium lime
- 1/3 cup peach preserves
- 4 boneless chicken thighs
- 1 teaspoon chili powder
- ¾ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- 2 peaches, sliced
- Decoration: scallions, lime wedges
Preparation
- Grate the zest from the lime to obtain ½ teaspoon; then squeeze the juice to measure 1 tablespoon. Stir together the zest, the lime juice and the peach preserves.
- Sprinkle chicken with salt, pepper and chili powder.
- Heat oil in a nonstick skillet over medium-high and cook the chicken until done. It should take about 5-7 minutes per side. Remove the chicken from the pan.
- Reduce the heat to medium and add the sliced peaches to the pan. Cook until they start to soften. Stir occasionally.
- Remove the pan from the heat and add the peach preserve sauce and stir well.
- Top with scallions and serve immediately with the side of your choice.
