Garlic Butter Grilled Oysters

Ingredients

SERVINGS: 3 Dozen
  • ½ cup olive oil
  • 5 tablespoons minced garlic
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 tablespoons chopped parsley
  • 1 cup unsalted butter, softened
  • 3 dozen pre-shucked oysters
  • ⅔ cup finely grated parmesan cheese
  • ⅔ cup finely grated romano cheese
  • lots of French bread

Preparation

Warm olive oil in saucepan over low heat. Add minced garlic, black pepper, Italian seasoning and chopped parsley until well incorporated.

Pour mixture over softened butter and mix well.

Place shucked oysters on the half shell, top with butter mixture and put directly on a hot charcoal grill. Remove from heat as soon the butter is bubbling (or leave to cook a little longer for preferred doneness). Liberally sprinkle each oyster with combined cheeses and serve immediately with French bread.
