- 4 cups arugula
- 3 ripe peaches, pitted and sliced
- ¾ cup chopped yellow bell pepper
- 3 tablespoons pecans
- ¾ cup cherry tomatoes, halved
- ½ medium red onion, diced
- Honey Dijon Mustard Dressing (recipe below)
Honey Dijon Mustard Dressing
- 1 tablespoon Dijon mustard
- ¼ cup apple cider vinegar
- 2 tablespoons lemon juice
- 2 tablespoons raw local honey
- ⅓ cup extra-virgin olive oil
- salt and pepper, to taste
Preparation
Summer Arugula and Peach Salad
Arrange arugula in a salad bowl. Arrange peaches, bell pepper, pecans, tomatoes and onion on top. Drizzle in the honey-mustard dressing to taste and toss to mix. Serve immediately.
Honey Dijon Mustard Dressing
Add all ingredients except oil to a small bowl. Whisk briefly to mix, then add the olive oil and whisk to emulsify. Season to taste.
