Ingredients
- 1 medium watermelon cut into bite size pieces, about 12 cups
- 1/4 cup balsamic vinegar
- 2 Tbsp raw honey (a lighter colored honey works best)
- Pinch of salt
- 1 Tbsp minced ginger
- 1 Tbsp minced ginger
Instructions
Using an immersion or upright blender, blend 6 cups of the chopped watermelon with remaining ingredients creating a soup. Mixed chopped watermelon with soup. Serve chilled, garnish with mint.
