Watermelon Mint Gazpacho

This is a super easy, refreshing and light soup that's perfect during our sweltering summers. No heat required! You can adjust the ingredients depending on the size of your watermelon.

Ingredients

  • 1 medium watermelon cut into bite size pieces, about 12 cups
  • 1/4 cup balsamic vinegar
  • 2 Tbsp raw honey (a lighter colored honey works best)
  • Pinch of salt
  • 1 Tbsp minced ginger
  • 1 Tbsp minced ginger

Instructions

Using an immersion or upright blender, blend 6 cups of the chopped watermelon with remaining ingredients creating a soup. Mixed chopped watermelon with soup. Serve chilled, garnish with mint.
