It’s Soft Shell Crab Season!
Lucky Houstonians are getting a fresh taste of just-harvested soft shell crabs at area seafood shops and eateries right now. The just-molted, supple crustaceans with a natural sweet flavor populate the Gulf during this short season from May through July.
“We have an annual date with these wonderful Gulf delicacies,” said Mike Shine, Owner of Frank’s Americana Revival & White Star Bar. “We have to thank the rain and the mild spring weather this year for the amazing bounty we’re receiving daily from our suppliers.”Executive chef Colin Shine has created a seasonal special that elevates the flavor of these succulent soft shell crabs. Chef starts by coating them in delicate panko bread crumbs before lightly pan frying them. He pairs the monstrous crabs with fresh vegetables including scrumptious mini artichokes from local Atkinson Farms, and cranks up the flavor with smoked tasso Béarnaise sauce and Steen's cane chile-pequin vinaigrette.
