Finely chop or grate the onions.
Peel potatoes and grate coarsely. Firmly squeeze the water from the grated potatoes and mix with onions.
Add the rest of the ingredients and mix well.
Heat oil in a deep frying pan. Make sure the oil is deep enough to cover half of the latke.
Before frying, again squeeze by hand any liquid in the mixture.
Fry each side for 4-5 minutes. Control the heat so it is not too hot or too low.
We prefer to serve with apple sauce, some like sour cream.
