Salted Watermelon Mocktail

This refreshing zero-proof sparkling refresher is inspired by salted watermelon. It’s low in sugar and high in delicate herbal flavors. If you’ d like to add booze, we recommend a shot of Texas sotol.

Ingredients

SERVINGS: 1 drink
  • 2 ounces fresh watermelon juice
  • pinch of flake salt
  • ½ ounce thyme simple syrup*
  • 1–2 drops rose water
  • hop water (or unflavored sparking water)
  • watermelon wedge for garnish
  • thyme sprigs for garnish

Preparation

TO MAKE THE MOCKTAIL

Step 1: In a shaker with ice, combine watermelon juice, salt, thyme simple syrup and rose water. Shake and pour over crushed ice in a highball glass.

Step 2: Dip a watermelon wedge in flake salt and place it on the rim of the glass to garnish. Top off the glass with sparkling water or hop water. Place a sprig of thyme into the glass. Enjoy!

TO MAKE SIMPLE SYRUP

Combine ¼ cup coconut sugar with ½ cup water in a small pot. Add 4–6 sprigs of thyme. Bring to a boil, then let cool.
