Ingredients
- ½ prickly pear
- 1 ounce gin
- ½ ounce Ginger Syrup (recipe below)
- 4 ounces champagne
Ginger Syrup
- 2-inch piece of ginger, peeled
- 1 cup sugar
- 1 cup water
Preparation
The Sparkling Prickly Pear
Yields 1 cocktail
Place prickly pear in a cocktail shaker and muddle with pestle until fruit is chunky purée consistency. Add gin and Ginger Syrup to the shaker and fill ⅔ full with ice. Place the cap on the shaker and shake vigorously until shaker becomes frosty. Strain into a coupe and top with champagne. Imbibe immediately
Ginger Syrup
Yields 2 cups
Slice ginger thinly and place in a small heavy-bottomed saucepan. Add sugar and water. Bring to a boil over high heat. Once the syrup boils, turn off heat and cool completely. Strain and store in an airtight container in the refrigerator for up to 1 week.
